CHICKPEA CURRY RECIPE
2 x Medium Onions
1 x Ginger
2 x cloves of garlic
1/2 xTinned tomatoes or fresh
Cumin seed 1 teaspoon
Curry leaves x 4
Bay leaves x 2
Coriander 1 bunch
Garam masala x 2 teaspoons
Salt x 2 teaspoons
Turmeric (haldi) x 2 teaspoons
Curry powder x 1 teaspoon
Olive oil
Cardamoms
Green Chillies x 2
Tinned chickpeas x 2 tins
Cooking preparation –
- Heat the pan with 3 teaspoons of
olive oil add cumin seeds, add chopped onions, green chilli, ginger, garlic and
fry until brown, add curry leaves and bay leaves , cinnamon sticks, cardamom’s
.
- Add tomatoes and continue to cook until brown and add garam masala, salt, curry powder, turmeric and cook until thick brown paste.
- Add some chopped coriander add to the paste.
-Add washed Chickpeas and mix and cook for 2 minute and stir well into the paste.
-Add 1 cup of water stir and cook for 20 minutes.
- Add fine chopped coriander to garnish and serve with rice or Chappati.

VEGTABLE
PILAU RICE
Cumin seed x 1 pinchCoriander x ½ bunch
Garam masala x 1 teaspoon
Salt x 1 tea spoon
Turmeric (haldi) x 1 tea spoon
Olive oil
Basmati Rice x 500gm packet
Mixed Vegetables x small frozen bag
Bay leaves x 2
Cinnamon sticks 1
Cloves 2
Fried onions x 2 onions
Add water
double the quantity of water to the rice i.e -1x cup of rice will require 2
cups of cold water. Cook for about 20 minutes.
Cover
cooking utensil with foil paper and cook rice in the boiling water until water
evaporates and rice is dry and fluffy. Leave to simmer for 10 minutes and serve
and garnish with coriander and cooked brown fried onions.
